Elephant Garlic Allium ampeloprasum Extra large cloves with a mild taste. Plant cloves 6-8 inches apart and cover with 4-6 inches of soil. Shallots Allium cepa, Aggregatum Group Considered the gourmet Allium, shallots have a distinctive but more delicate and mild flavor than other onions. Grow and store as you would onions. Allow bulbs that form above the surface of the soil to remain exposed. Harvest when the leaves turn yellow. Topsetting Onions Allium cepa, Proliferum Group Very hardy perennials. These fascinating onions form underground bulbs and hazelnut-sized bulblets at the top of each stalk. Garlic, Shallots & Specialty Onions are shipped only in the fall-late September or early October, depending on the season. Quantities are limited so order early.
